Garlic Honey BBQ Chicken

Prep Time: 30 min

Ingredients:
  • 8 chicken strips (sliced)
  • 1/2 cup flour
  • pinch of salt
  • pinch of black pepper

Preheat oven to 400. Roll chicken in flour, fully cover, place strips in a 9x11 or 8x8 pan, place in oven for 10 minutes. Meanwhile make sauce.

Ingredients:
  • 1/3 cup lemon juice
  • 1/2 stick butter, melted
  • 3 Tbsp. BBQ sauce
  • 1/2 cup honey 
  • 2 cloves minced garlic

Mix all the sauce ingredients together. After chicken has cooked 10 minutes, pour sauce over chicken and bake for another 20 minutes.
Remove from oven, serve over rice, and enjoy!

Banana Bread

Prep Time: 10 min     Cook Time: 55 minutes     Yield: Makes one loaf

Ingredients

  •       2 very ripe bananas, peeled
  •       1/3 cup melted butter
  •       3/4 cup sugar
  •       1 egg, beaten
  •       1 teaspoon vanilla extract
  •       1 teaspoon baking soda
  •       Pinch of salt
  •       1 1/2 cups of all-purpose flour

Preheat the oven to 350°F (175°C), and butter a 4x8-inch loaf pan.
In a blender, mix the ripe bananas and melted butter until smooth.
Mix in the baking soda and salt. Stir in the sugar, beaten egg, and vanilla extract. Mix in the flour.
Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 350°F (175°C), or until a tester inserted into the center comes out clean.
Remove from oven and let cool.
